- 1 (16 oz.) can pinto beans, drained
- 1 small tomato, peeled, seeded and chopped
- 3 scallions, finely chopped
- 1 c. shredded sharp Cheddar cheese
- 2 Tbsp. chili powder
- corn tortilla chips (as accompaniment)
Directions

1In blender, puree beans and tomato until smooth. Transfer to a medium saucepan or chafing dish. Add scallions, cheese and chili powder. Cook over low heat, stirring, until cheese is melted and dip is heated through, 6 to 8 minutes.

2Serve hot with crisp tortilla chips for dipping.
