Ingredients
- 1 Tbsp. cornmeal
- 1/2 lb. ground beef, browned and drained
- 3/4 tsp. salt
- 1 c. milk
- 1 can cream-style corn
- 1/4 c. chopped onion
- 2 c. Cheddar cheese
- 1 c. yellow corn meal
- 1/2 tsp. soda
- 2 eggs, beaten
- 1/4 c. vegetable oil
- 2 to 4 jalapeno peppers, chopped
Directions

1Sprinkle 1 tablespoon cornmeal in bottom of a well-greased skillet.

2Cook over medium heat until cornmeal is lightly browned. Set skillet aside.

3Combine cornmeal, salt and soda.

4Add milk, corn, eggs and oil.

5Mix well.

6Pour half of batter in skillet. Sprinkle cheese, onion, peppers and ground beef which has already been cooked.

7Top with remaining batter.

8Bake 50 to 55 minutes at 350°.
