- 3 34 cups all-purpose flour
- 2 teaspoons salt
- 2 teaspoons active dry yeast
- 1 12 cups cold water
- 23 cup boiling water
- 2 12 teaspoons sugar
- 3 tablespoons butter
- 2 cups of shredded mozzarella cheese
- 1 cup cottage cheese
Directions

1Mix sugar with boiling water until dissolved.

2combine boiling and cold water in medium bowl.

3sprinkle yeast on top.

4mix flour and salt in large mixing bowl.

5Mix cheese into flour mixture thoroughly so it isn't to clumped up.

6when yeast is all dissolved and foamy, stir then add to flour mixture.

7mix until flour is all dissolved and sticky.

8Let rise some where warm for 1-2 hours.

9Punch down, and seperate into 24 even peices on a floured board.

10Butter two regular sized muffin tins liberally (there are typically 12 muffin spaces per tin).

11Drop the 24 pieces of dough into the muffin tins.

12Let rise somewhere warm for 30 minutes.

13Preheat oven to 425.

14Bake for 10 minutes, then turn down to 375.

15Bake another 10 - 15 minutes.

16You can test by spearing one with a fork and taking it out to break open.

17Cheese can be gooey, but dough fully baked.
