Cheesy Catfish, Please!

  • 2 lb. skinless catfish fillets
  • 1/4 c. Parmesan cheese
  • 1/4 c. flour
  • 1/2 tsp. pepper
  • 1 tsp. paprika
  • 1/4 c. milk
  • 2 Tbsp. margarine, melted
  • 3 oz. shredded mixture Mozzarella and Cheddar cheese

Directions

    Combine the Parmesan, flour, pepper and paprika.

    Dip catfish in milk and coat with cheese mixture.

    Place the fish in a baking dish; pour margarine over the fish and bake at 400° for 15 to 20 minutes or until golden and flaky.

    Sprinkle fish with shredded cheese and put under broiler until bubbly.

    Serves 8.
