  • 4 lb. boneless chicken breast
  • seasoned bread crumbs
  • 1 can chicken broth
  • margarine or oil
  • 3 eggs, beaten
  • 1/2 c. milk
  • 10 oz. Co-jack cheese, shredded (Colby and Monterey Jack, marbled)

    Cut chicken into bite size pieces.

    Beat eggs and milk together.

    Add chicken.

    Let stand approximately 1/2 hour.

    Roll chicken in breadcrumbs.

    Brown in skillet using margarine or oil. Drain on paper towel.

    Once browned and drained, place chicken in casserole dish.

    Add cheese and broth.

    Bake 1 hour at 350°. Serve with rice; enjoy.
