Cheesy Chicken Pitas

  • 1 c. red, yellow and green bell pepper strips
  • 1 small onion, sliced
  • 1 clove garlic, minced
  • 3 boneless, skinless breast halves, cut into strips (approximately 1 1/4 lb.)
  • 2 whole wheat pitas
  • 4 slices American cheese, cut diagonally
  • lettuce
  • 1/4 c. sour cream
  • nonstick cooking spray

Directions

    Toss peppers and onion together in a small bowl.

    Spray a small frying pan with cooking spray.

    Cook garlic and chicken until thoroughly heated.

    For each pita half, fill with a layer of chicken strips, 2 halves of cheese and 1/4 cup pepper and onion mixture.

    Cover loosely.

    Microwave on High for 30 seconds or until cheese is melted.

    Add lettuce and serve with sour cream. Makes 4 pitas.
