- 34 cup all-purpose flour
- 2 12 teaspoons baking powder
- 34 teaspoon salt
- 1 tablespoon sugar
- 12 cup yellow cornmeal
- 1 cup cheddar cheese, grated
- 1 egg, beaten
- 34 cup buttermilk
- 3 tablespoons butter, melted and cooled
Directions

1Preheat oven to 400F.

2Combine flour, baking powder, salt, and sugar.

3Stir in cornmeal and cheese.

4Make a well in center of dry ingredients and add beaten egg, milk, and the melted butter.

5Stir just until dry ingredients are moistened.

6Fill greased 2-inch muffin cups 2/3sfull.

7Bake for 20 to 25 minutes, or until nicely browned.

8Note: Crumbled bacon in the batter is a nice addition.
