Cheesy Egg Casserole

  • 6 eggs
  • 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 1 c. milk
  • 8 oz. cottage cheese
  • 1 (3 oz.) pkg. cream cheese, cubed
  • 2 Tbsp. butter
  • 1 lb. Monterey Jack cheese, cubed

Directions

    In a large bowl, beat the eggs.

    Add flour, baking powder, salt and milk, beating until smooth.

    Beat in the cottage cheese and stir in the cubed cream cheese and cubed Monterey Jack cheese. Pour into a well greased and floured 2-quart baking dish.

    Dot with butter.

    Bake in a 350° oven for 45 minutes.
