- 1/4 tsp. black pepper
- 1/3 cup Cracker Barrel Shredded Mozzarella Cheese

1Heat oil in small nonstick skillet on medium-high heat.

2Meanwhile in small bowl, whisk eggs and pepper.

3Add to skillet; cook 2 to 3 min.

4or until eggs are almost set, lifting edge with spatula and tilting skillet to allow uncooked portion to flow underneath.

5When egg mixture is set but top is still slightly moist top with cheese.

6Slip spatula underneath omelette, tip skillet to loosen and gently fold omelette in half.

7Cook 1 to 2 min.

8Slide or flip onto serving plate.

9Serve with tomato slices.
