Cheesy Polenta(Cornmeal)

  • 3/4 c. finely chopped onion
  • 3 Tbsp. butter
  • 5 c. water
  • 2 c. yellow cornmeal
  • 1 1/3 c. half and half
  • 3/4 c. grated Parmesan or Locatelli Romano cheese (divided)
  • 1 tsp. salt
  • 8 oz. grated Mozzarella cheese (divided)

Directions

    Preheat oven to 350°.

    Grease a 13 x 9 x 2-inch baking pan. In a large saucepan, saute onions in butter.

    Add water, bring to boil.

    Gradually add cornmeal, stirring constantly.

    Add half and half, 1/2 cup Parmesan cheese and salt.

    Spread half of cornmeal mixture into pan.

    Sprinkle with more cheese and 1/3 of the Mozzarella.

    Spread rest of cornmeal on top and sprinkle with remaining two cheeses.

    Bake 20 minutes.

    Cut into squares.
