  • 3 tablespoons butter
  • 1 onion, diced
  • 2 stalks celery, diced
  • 4 ounces mushrooms, diced
  • 12 cup flour
  • 2 cups milk
  • 2 cups low sodium chicken broth
  • 1 12 cups sour cream
  • 2 cups colby-monterey jack cheese
  • 1 teaspoon Mrs. Dash table blend seasoning
  • 18 teaspoon pepper
  • 8 cups potatoes, diced

Directions

    Saute onion and celery in large pan in butter until nearly translucent; add mushrooms, cook through.

    Sprinkle flour over and cook about a minute to form roux.

    Add liquids and stir on low until thicken.

    Add sour cream, cheese, Mrs.Dash, pepper stir to combine and finally the potatoes.

    Put everything in crock-pot and cook 4 hours on high or until potatoes are cooked through.
