Cheesy Spinach Cakes

  • 2 tbsp butter, softened
  • 2 oz finely grated Parmesan cheese
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 10 oz pre-cooked white rice
  • 3 None large eggs, beaten lightly
  • 1 cup cottage cheese
  • 5 oz feta cheese, crumbled
  • 3 None spring onions, chopped

Directions

    Grease 10 cups of a muffin pan with the butter. Sprinkle the base and sides of cups with half the Parmesan. Preheat oven to 375°F.

    For the cake mixture, combine spinach, rice, eggs, cottage cheese, feta and spring onion in a large bowl and mix well. Spoon into the muffin cups. Sprinkle the tops with the remaining Parmesan. Bake 30 mins or until browned and just set. Serve hot.
