- 2 tbsp butter, softened
- 2 oz finely grated Parmesan cheese
- 10 oz frozen chopped spinach, thawed and squeezed dry
- 10 oz pre-cooked white rice
- 3 None large eggs, beaten lightly
- 1 cup cottage cheese
- 5 oz feta cheese, crumbled
- 3 None spring onions, chopped
Directions

1Grease 10 cups of a muffin pan with the butter. Sprinkle the base and sides of cups with half the Parmesan. Preheat oven to 375°F.

2For the cake mixture, combine spinach, rice, eggs, cottage cheese, feta and spring onion in a large bowl and mix well. Spoon into the muffin cups. Sprinkle the tops with the remaining Parmesan. Bake 30 mins or until browned and just set. Serve hot.
