Cheesy Tomato Chowder

Ingredients
- 1/2 c. butter
- 1/2 c. chopped onion
- 1/4 c. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. oregano
- 1 can condensed beef broth
- 1 1/3 c. milk
- 1 c. (4 oz.) shredded Cheddar
- 16 oz. stewed tomatoes
Directions

1Saute onion in butter until tender.

2Stir in flour and seasonings until smooth.

3Remove from heat and gradually stir in broth and milk.

4Heat to boiling, stirring constantly.

5Boil and stir 1 minute; remove from heat.

6Stir in half of the cheese at a time.

7Stir until completely melted before adding remaining cheese.

8Place tomatoes and liquid in blender; cover and puree until smooth.

9Stir tomato mixture into soup.

10Heat to serving temperature.

11Do not boil.
