  • 3 whole Eggs
  • 3/4 ounces, weight Coconut Oil
  • 1 teaspoon Vanilla Essence
  • 1 Tablespoon Rum
  • 5-1/3 ounces, weight Spelt Flour
  • 1 teaspoon Baking Powder
  • 1 Tablespoon Stevia Sugar
  • 5-1/3 ounces, weight Pitted Fresh Cherries

Directions

    1. Preheat the oven to 180 C. Lightly beat the eggs in a medium sized bowl then add the oil, vanilla and rum and gently mix.

    2. Add dry ingredients (flour, baking powder and sugar) into wet and mix until you get a creamy texture.

    3. Pour the dough into a baking tray (put baking paper in it first; I used a 30x20 cm tray).

    4. Add cherries on the top.

    5. Bake for 25-30 minutes at 180 C.
