- 1 1/2 lb. (4 c.) sweet red cherries, stemmed and pitted
- sugar
- 1 c. fork-stirred all-purpose flour
- 1 1/2 tsp. baking powder
- pinch of salt
- 1 large egg
- grated rind of 1 medium orange (about 2 tsp.)
- 1/4 c. orange juice
Directions

1In a 10 x 6 x 2-inch baking dish, mix together cherries and 1/2 cup sugar.

2Stir together flour, baking powder and salt. Cream butter and 1/3 cup sugar; beat in egg until blended.

3Add flour mixture, orange rind and orange juice; stir only until flour mixture is moistened.

4Spread over cherries.

5Bake at 375° until a cake tester inserted in center comes out clean of batter (about 45 minutes).
