Ingredients

  • 2 c. unbleached all-purpose flour
  • 3 tsp. baking soda
  • 1/2 tsp. salt
  • 5 Tbsp. white sugar
  • 1 egg, beaten
  • 1 c. milk
  • 3 Tbsp. unsalted butter, melted
  • 3/4 c. fresh cherries, chopped

Directions

    Preheat oven to 425°.

    Sift dry ingredients together, except for 2 tablespoons sugar.

    Mix together the egg, milk and melted butter.

    Sprinkle the chopped cherries with the reserved 2 tablespoons of sugar and mix.

    Add cherries to the dry ingredients to the wet and combine quickly.

    Do not overmix.

    Lumps are okay. Immediately turn batter into greased muffin tins, filling each cup 2/3 full.

    Bake for 20 to 30 minutes.

    Cool muffins on a rack before serving.
