Cherry Preserves

Ingredients
- 1 Cherries (as desired)
- 1 Sugar (40% of the cherries in weight)
- 1 Lemon juice (5% of the cherries in weight)
Directions

1Wash the cherries and pat dry or air dry.

2Remove the pits from each cherry.

3If you press on them lightly the pits should pop from the stem end.

4Mix the sugar with the cherries and leave overnight.

5Moisture will come out of the cherries.

6Put the cherries with the liquid and all in a pan, and cook over medium-high heat.

7Add the lemon juice.

8Remove the scum.
-
9Since we want the preserves to be bright red when done, just simmer for up to 20 minutes.

10Pour into jars while still hot.

11I use a large funnel.

12Fill the jars up to the brim.

13Screw on the lids right away, and then turn the jars upside down.

14The lids will become sterilized due to the heat of of the preserves, so you can store it for a long time.

15Done.

16If you want this to have a jam-like thick texture, add pectin when you simmer it.

17Use it on bread, mix into yogurt, etc.

18Here I have used it as a topping on milk custard pudding.

19Fig preserves (fig jam) is made with the same ratio of fruit to sugar.

20Spoon a generous portion over pancakes.
