Cherry Rice Dessert

Ingredients

  • 1 can, 8 oz, crushed pineapple
  • 1 pkg. 3 oz. cherry gelatin
  • 1/2 tsp salt
  • 2 c. cooked rice
  • 1/2 c whipping cream, whipped
  • 1/4 c chopped pecans or walnuts
  • 1 tsp vanilla
  • 1 tsp almond extract

Directions

    Drain pineapple thoroughly, reserve juice.

    Add enough water to juice to make 1 1/2 c liquid, heat to boiling.

    Add gelatin and salt, stir until dissolved.

    Add rice, chill over ice water until partly thickened.
  5. 5
    Fold in whipped cream, nuts and flavorings. Turn into 8 individual molds or one large mold and chill until firm.

    Makes 8 servings.
