- 2 Tbsp. butter
- 3 medium potatoes (dice into large chunks)
- 1 tsp. garlic
- 1 tsp. olive oil
- 1 medium onion (sliced)
Directions

1Melt butter and saut garlic in pan on medium heat.

2Add olive oil and allow it to heat up.

3Then add potatoes to pan and cook on medium to low heat for 10 minutes, covered.

4Add sliced onion to pan and lower heat to low and simmer for 10 to 15 minutes, covered. Cook until potatoes and onion are tender.

5Onions can be added sooner depending on how much you want them to cook down.

6Serves 2 to 3 people.
