  • 1 partly baked pie shell
  • 1 1/4 c. sugar
  • pinch of salt
  • 7 Tbsp. butter, room temperature
  • 3 large eggs
  • 1 large lemon, finely grated and juice drained

Directions

    Beat sugar, salt and butter together.

    Add eggs, one at a time.

    Beat after each one.

    Add lemon.

    Bake at 325° for 35 minutes, on middle shelf, until set.

    Should be brown slightly.
