Chestnut-Mushroom Stuffing

  • 1 1/2 c. onion, chopped
  • 1 1/2 c. sliced water chestnuts
  • 2 c. butter
  • 5 qt. bread cubes (2 large loaves)
  • 4 tsp. salt
  • 1 tsp. pepper

Directions

    In a large skillet, cook and stir the onion, chestnuts and mushrooms in butter. Cook until onion is tender. Add this to 1/3 of the bread cubes.

    In a very large bowl, mix this and all other ingredients.

    Toss!

    Stuff turkey just before roasting.

    Makes 5 quarts; enough for a 20 to 24 pound turkey.
