  • 2 chicken Legs of
  • 8 bread slcs, made into breadcrumbs
  • 15 tablespoons flour
  • 3 eggs beaten
  • 2 tablespoons butter
  • 2 tablespoons English mustard
  • black pepper to season

Directions

    Remove the chicken legs and take out the bone. Take the chicken meat and place a bag or cling film over it. Take a rolling pin and roll the chicken until it is flat. Season with black pepper and brush with English mustard.

    Coat the chicken with the flour, egg and breadcrumbs. When you are ready to use them, shallow fry in a little butter for about 10-15 minutes until golden brown and cooked thoroughly right through.
