Ingredients

  • For the chicken:
  • 4 garlic cloves, chopped
  • 2 T olive oil
  • 2 T soy sauce
  • 1 t lemon juice
  • 1 t ground ginger
  • 1 t cardamom pods (about 16)
  • 1 t finely grated orange zest
  • 1 star anise
  • 1/2 t cinnamon
  • 1/2 t black pepper
  • 1 pinch ground cloves
  • 2 1/2 lb chicken wings (or thighs)
  • For the aioli:
  • 4 garlic cloves, chopped
  • 1/2 t coarse sea salt
  • 1 egg yolk
  • 1 cup olive oil
  • lemon juice to taste

    Coarsely chop chicken marinade ingredients together in pestle or blender, to rough puree. Marinate chicken in this for 6 hours or overnight in refrigerator. Broil wings (I baked chicken thighs in covered pan) and then serve with aioli.
