Ingredients

  • 1 large fryer, cut up
  • 3 carrots, diced
  • 1 small onion, diced
  • 2 stalks celery, diced
  • 1 green pepper, diced
  • 4 chicken bouillon cubes
  • seasoned salt to taste
  • seasoned pepper to taste
  • 3 c. long cook rice
  • 6 c. water
  • 1 tsp. parsley
  • 1/4 tsp. garlic (optional)

Directions

    Brown chicken pieces in large pot.

    Add diced ingredients. Add seasonings.

    Pour in water and cover pot.

    Bring to boil and reduce heat to simmer.

    Let simmer for 3 hours, stirring occasionally.

    Remove chicken pieces; add bouillon and rice. Follow rice cooking directions.

    When done, return chicken to pot to warm or debone and add to pot in bite-size pieces.

    Serves 6 easily.
