- 3 1/4 lb. chicken
- 1 large onion, sliced
- 2 Tbsp. margarine
- salt and pepper to taste
- 1 c. uncooked rice
- 1 red pepper, chopped
Directions

1Cook onion in one tablespoon of margarine with garlic (to taste) and salt and pepper for 15 minutes in casserole pot.

2Add 3 cups of water, 1 tablespoon of margarine and 1 teaspoon salt. Cover the casserole and cook for 5 minutes, then add rice, chicken (cut up in size pieces that you like) and red (bell) pepper and cover and cook 20 minutes.

3Serves 6.
