- 1 c. flour
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 c. melted margarine, divided
- 1/2 c. honey
- 1/2 c. lemon juice
- 1 tsp. tarragon
- 3 lb. frying chicken, cut in pieces
Directions

1Combine the first 3 ingredients in paper bag.

2Add the chicken and shake.

3Put chicken pieces, skin side down, in shallow casserole.

4Pour 1/2 cup melted margarine over.

5Sprinkle with remaining flour.

6Bake at 400° for 20 minutes.

7Blend the honey, lemon juice, tarragon and 1/2 cup melted margarine.

8Turn chicken over; cover with mixture.
-
9Return to oven for another 30 minutes or longer, basting twice.
