- 1 1/4 lb. boneless, skinless chicken breasts, cut into 1/2-inch pieces
- salt and pepper to taste
- 2 egg whites, beaten
- 1/2 c. seasoned dry bread crumbs
- 1/2 c. calorie-reduced mayonnaise
- 1/2 c. yellow mustard
- 1 tsp. horseradish
Directions

1Preheat oven to 350°.

2Coat baking sheet with Pam.

3Season chicken with salt and pepper.

4Place egg whites in shallow dish. Using fork, beat until mixed.

5Pour bread crumbs onto wax paper. Dip each chicken piece in egg whites, then roll in bread crumbs. Place chicken pieces 1-inch apart on prepared baking sheet.

6Then spray pieces with Pam.

7Bake 10 to 15 minutes or until tender and browned.
