Ingredients

  • 1 stewing chicken, cut in large pieces (neck and giblets included)
  • 2 qt. cold water
  • 2 onions, stuck with several whole cloves
  • 3 to 4 celery stalks (including leaves), cut in pieces
  • 3 to 4 carrots, scraped and cut in pieces
  • 1 large bay leaf
  • several whole peppercorns (if desired)

Directions

    Wash chicken and pat dry; put in soup kettle and cover with 2 quarts of water.

    Bring to a boil.

    Skim foam and lower heat. Cover kettle and simmer for 2 hours.

    Add onions, celery, carrots and bay leaf.

    Simmer an additional hour, skimming foam as necessary.

    Remove from heat and cool.
