Ingredients
- 1 lb fresh spinach
- 1 tsp olive oil
- 1 1/4 lb uncooked Chicken, chopped
- 4 each green onions
- 2 clove garlic, minced
- 1 cup ricotta cheese
- 3/4 cup grated parmesan cheese (fresh is best)
- 1/4 tsp each oregano, nutmeg, salt & pepper
- 16 piece sheets of phyllo
- 1/4 cup melted butter
Directions

1Rinse spinach, shaking off excess water.

2Place in large Dutch oven; cover & cook over med- high about 4 minutes or until wilted.

3Transfer to seive & squeeze out water; chop & put in bowl.

4In skillet heat oil over high & cook chIcken until browned; add to bowl.

5Add onions & garLic to pan; cook 1 minute.

6Add to bowl.

7Let cool 10 minutes.

8Stir in ricotta & parm & spices.

9Place 1 sheet phyllo on work surface, keeping remainder covered with plastic wrap & damp towel to prevent drying.

10Brush lightly with some melted butter; top with second sheet of phyllo.

11Mound 1/2 cup of filling about 2 inches from short edge.

12Fold short edge over filling; fold sides over top & roll up.

13Place seam side down on greased rimmed baking sheet; brush tops with melted butter.

14-- make ahead:freeze on baking sheet until firm.

15Wrap individually in plastic wrap & overwrap with foil; freeze up to 2 wks.

16Bake from froZen.

17Bake in 325F oven for about 35 minutes or until golden.
