Ingredients

  • 1/4 c. olive oil
  • 2 1/2 to 3 lb. cut up chicken
  • 2 onions, sliced
  • 2 garlic cloves, minced
  • 2 c. (1 can) Italian tomatoes
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. celery seed
  • 1 tsp. crushed oregano
  • 1/2 c. dry white wine
  • 2 bay leaves

Directions

    Brown chicken in oil; keep hot.

    Cook onions and garlic in oil until tender.

    Add all other ingredients, except wine, and blend. Cook for 5 minutes.

    Return chicken to skillet.

    Simmer for 45 minutes covered.

    Add wine; cook, uncovered, for 15 minutes.

    Skim off fat, take out bay leaf and serve chicken with sauce poured over it.
