Ingredients

  • 1 small chicken, cut up
  • 1 large can tomato sauce
  • 1 small red onion, chopped
  • 1/4 c. olive oil
  • 1 tsp. garlic powder
  • small piece bay leaf
  • 1/2 tsp. oregano
  • 1/2 tsp. celery seed
  • 1/2 c. white wine

Directions

    Brown chicken in olive oil until golden brown.

    Remove from pan and set aside.

    Saute onion in olive oil until soft, but not brown.

    Add tomato sauce, garlic powder, bay leaf and spices. When well blended, add chicken back.

    Bring to a boil slowly; lower heat.

    Add wine; cover and simmer for one hour.

    Serve with rice, white preferred.
