- 1 small chicken, cut up
- 1 large can tomato sauce
- 1 small red onion, chopped
- 1/4 c. olive oil
- 1 tsp. garlic powder
- small piece bay leaf
- 1/2 tsp. oregano
- 1/2 tsp. celery seed
- 1/2 c. white wine
Directions

1Brown chicken in olive oil until golden brown.

2Remove from pan and set aside.

3Saute onion in olive oil until soft, but not brown.

4Add tomato sauce, garlic powder, bay leaf and spices. When well blended, add chicken back.

5Bring to a boil slowly; lower heat.

6Add wine; cover and simmer for one hour.

7Serve with rice, white preferred.
