Chicken Cacciatore

Ingredients

  • 3 lb. (1) broiler fryer, cut up
  • 3 Tbsp. olive or vegetable oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1/2 lb. mushrooms, sliced
  • 1 large can tomatoes
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. oregano, basil or Italian seasoning
  • 1 (8 oz.) can tomato puree or sauce
  • 1 sweet green pepper, seeded and sliced

Directions

    Heat oil in Dutch oven or large kettle.

    Brown chicken, part at a time; remove and keep warm.

    Pour off all but 1 tablespoon of oil.

    Add onion, garlic and mushrooms; cook 1 minute.

    Add tomatoes, sauce, salt and pepper and other seasonings.

    Add 1 cup of water or rinse sauce can by filling with water and adding to pot.

    Cook for 1 minute.

    Return chicken to pot; simmer over low heat for 1 hour or until chicken is tender.

    Add green pepper. Cook several minutes.

    Makes 4 servings.

    If you want to make 6 servings, increase vegetables.
