- 2 lb. cut up chicken
- 1 c. sliced onion
- 1/2 c. chopped green peppers
- 1/4 c. olive oil
- 3 medium cloves garlic
- 1 lb. can plum tomatoes
- 2 Tbsp. chopped parsley
- 1/2 tsp. crushed oregano
- 1/4 tsp. thyme
- 3/4 tsp. salt
- 1/2 tsp. basil
- 1/2 tsp. rosemary
- dash of pepper
- 1/4 lb. sliced mushrooms
- 1/2 c. whole green olives
Directions

1Heat oil in large skillet.

2Add chicken; brown and set aside. Add onion, green pepper and garlic.

3Cook until onion is tender. Force Italian plum tomatoes through strainer.

4Add tomato liquid, parsley, basil, rosemary, oregano, thyme, salt and pepper to skillet.

5Cook over low heat for 15 minutes, stirring occasionally.

6Add chicken.

7Cover and cook over low heat 45 minutes, stirring occasionally.

8Add mushrooms and olives.

9Cook uncovered 15 minutes or until sauce is desired consistency.

10Serve with rice or pasta.
