- 2 to 3 lb. broiler fryers, cut up
- 6 Tbsp. salad oil
- 1 c. onion, cut up
- 3/4 c. green peppers, cut up
- 2 cloves garlic, minced
- 1 can tomatoes (28 oz.)
- 1 (8 oz.) can tomato sauce
- 1/2 c. Chiantior or red wine
- salt and pepper to taste
- 1/2 tsp. allspice and thyme
- 2 bay leaves
- dash of cayenne
Directions

1In hot oil in large skillet, cook chickens until evenly browned.

2Add onions, green peppers and garlic; brown lightly. Add rest of ingredients.

3Simmer, uncovered, for 30 minutes or until chicken is tender.

4Makes 8 servings.

5Sauce is delicious when served over cooked thin spaghetti.
