Ingredients

  • 2 to 3 lb. broiler fryers, cut up
  • 6 Tbsp. salad oil
  • 1 c. onion, cut up
  • 3/4 c. green peppers, cut up
  • 2 cloves garlic, minced
  • 1 can tomatoes (28 oz.)
  • 1 (8 oz.) can tomato sauce
  • 1/2 c. Chiantior or red wine
  • salt and pepper to taste
  • 1/2 tsp. allspice and thyme
  • 2 bay leaves
  • dash of cayenne

Directions

    In hot oil in large skillet, cook chickens until evenly browned.

    Add onions, green peppers and garlic; brown lightly. Add rest of ingredients.

    Simmer, uncovered, for 30 minutes or until chicken is tender.

    Makes 8 servings.

    Sauce is delicious when served over cooked thin spaghetti.
