  • 4 chicken-breast cutlets (about 1 1/4 lb.)
  • 3 tbsp. oil
  • 1 1/4 lb. tomatoes, chopped
  • 3 cloves garlic, sliced
  • 1/2 tsp. salt
  • 8 oz. fresh mozzarella balls, halved
  • Fresh basil
  • Roasted broccolini, for serving

Directions

    Lightly flour chicken, cookin in oil 6 minutes or until cooked through, turning once.

    Transfer cutlets to plate.

    To skillet, add tomatoes, garlic, and salt.

    Cook 3 minutes stirring and scraping.

    Top chicken with tomato sauce, mozzarella, and basil.

    Serve with broccolini.
