- 1 pkg. boneless chicken breasts
- 2 medium onions
- 1 large can black olives
- 2 medium green peppers
- 2 large jars Cara-Mia artichoke hearts
- 1 large can Progresso tomato puree
- 1 large can Progresso crushed tomatoes
- 5 large cloves garlic
- oregano, salt and pepper to taste
- 1/4 c. olive oil
- 8 oz. sliced mushrooms
Directions

1Drain oil off artichoke hearts; save.

2Add to olive oil and heat in large frypan.

3Skin chicken and cut into large pieces; cook in olive oil mixture.

4Remove when done.

5Quarter onion and chop peppers into medium pieces.

6Add to olive oil and saute.

7Add sliced mushrooms; saute until just tender.

8Add crushed garlic cloves; stir.

9Add tomato puree, crushed tomatoes, olives and chicken.

10Add remaining ingredients; cook about another 10 to 15 minutes.

11Serve over rice.
