- 5 Tbsp. fat (may use 3 to 4 Tbsp. olive oil)
- 4 Tbsp. flour
- salt and pepper to taste
- 1 c. chopped celery, cooked
- 1 c. green peas or beans
- 1/2 c. onion, chopped
- 2 c. chicken stock
- 2 to 3 c. cooked chicken, chopped
- 1 c. sliced carrots, cooked
Directions

1Heat fat.

2Add onion and cook until soft and golden, approximately 10 minutes.

3Add flour; stir until blended.

4Add stock slowly and stir over low heat until thick and smooth. Season to taste.

5May wish to use celery and/or onion salt.
