Ingredients
- 2 pkg. frozen broccoli
- 1 (16 oz.) can carrots
- 4 large chicken breasts
- 2 cans cream of chicken soup
- 1 c. mayonnaise
- 1/2 tsp. lemon juice
- 1/4 tsp. curry powder
- 1/2 c. shredded Cheddar cheese
- 1/2 c. bread crumbs
- 1 Tbsp. melted butter
Directions

1Simmer chicken with celery tops and carrots in salted water for about 1 1/2 hours.

2Let cool in broth.

3Remove and drain. Cook vegetables until just tender.

4Drain and place in greased 9 x 12-inch casserole.

5Place pieces of chicken on top of vegetables. Mix soup, mayonnaise, lemon juice, curry and a touch of water in a bowl; pour over chicken.

6Sprinkle with cheese.

7Mix melted butter and bread crumbs; put over top.

8Sprinkle with paprika.

9Bake for 30 minutes, uncovered, in a 350° oven.
