  • 2 to 3 whole chicken breasts
  • 1 bunch broccoli or frozen spears
  • 1 c. rice, cooked
  • 2 cans cream of chicken soup
  • 1 c. chicken broth
  • 1 box stuffing mix
  • 2 c. Cheddar cheese, shredded
  • 1 c. milk
  • salt and pepper to taste

Directions

    Cook breasts in salted water with onion.

    Save broth.

    Spray or butter 9 x 13-inch casserole pan.

    Separate chicken into pieces to cover bottom of pan.

    Layer broccoli spears on top.

    Mix soup and rice with milk.

    Pour over steamed chicken and broccoli.

    Mix stuffing mix and one cup broth.

    Toss together then place on top of casserole.

    Add Cheddar cheese to top.

    Bake at 350° for 1/2 hour.
