  • 1 pkg. Uncle Ben's long grain and wild rice
  • 1 chicken, boiled and meat removed
  • 1 medium onion, chopped fine
  • 3/4 c. celery, chopped fine
  • 1 small bell pepper, chopped fine
  • 1 can water chestnuts (dried and sliced)
  • 3/4 c. mayonnaise
  • 1 can cream of chicken soup

Directions

    Cook rice in 2 cups chicken broth until done (5 minutes). Saute onion, pepper and celery. Combine all ingredients and bake at 350° for approximately 45 minutes until browned.
