  • 1 tablespoon olive oil
  • 4 skinless chicken breast cut into chunks
  • 1 onion peeled, finely chopped
  • 1 1/4 cups chicken stock
  • 1 sweet potato peeled, cut into chunks
  • 2 1/2 ounces frozen peas
  • 2 1/2 ounces baby corn
  • 1 1/2 teaspoons cornstarch mixed with 1 1/2 tsp water until smooth
  • mashed potatoes to serve

Directions

    Heat oil in a frying pan. Sear chicken for 4-5 mins. Add onion and cook for 1 min. Deglaze with stock, scraping up browned bits. Add sweet potato and simmer for 15 mins. Add peas and baby corn. Simmer for 5 mins. Add cornstarch slurry and simmer for 1 min.
