Ingredients

  • 2 c. chicken, cooked and chopped
  • 1 can cream of chicken soup
  • 1/2 c. grated Cheddar cheese
  • 1/4 tsp. black pepper
  • 1/2 tsp. celery salt
  • 1 large can evaporated milk
  • 2 c. cooked rice
  • 1 (8 oz.) can sliced mushrooms
  • 4 Tbsp. margarine
  • 1/4 c. chopped onion
  • 1/2 tsp. salt
  • 3 Tbsp. chopped pimento
  • 1/4 c. Parmesan cheese

Directions

    Saute onion in margarine.

    Add chicken soup and liquid from mushrooms.

    In mixing bowl, mix chicken, rice, milk, 1/2 of mushrooms, pimento, salt and pepper.

    Add soup mixture.

    Blend well and pour into greased baking dish.

    Top with cheese and rest of mushrooms.

    Bake at 350° for 30 minutes.
