Ingredients

  • 3 chicken breasts, cooked and cut into bite size pieces
  • 1 pkg. Uncle Ben's wild and white rice, cooked
  • 3 stalks diced celery
  • 1/2 lb. sliced mushrooms
  • 3/4 c. soft bread crumbs
  • 1/4 c. milk
  • 1 tsp. lemon juice
  • 1/2 onion, chopped
  • 1 1/2 c. grated sharp Cheddar cheese
  • 2 cans cream of chicken soup
  • 1 c. mayonnaise

Directions

    Combine soup, milk and mayonnaise.

    Add lemon juice.

    Saute mushrooms, celery and onion in butter.

    Mix vegetables with rice and spread in bottom of 3-quart casserole.

    Layer chicken pieces on rice.

    Cover with sauce.

    Top with cheese and bread crumbs. Sprinkle with paprika.

    Bake for 45 minutes at 350°.
