- 1 pkg. boneless chicken thighs (6)
- 2 Tbsp. olive oil
- 8 oz. sliced crimini or white mushrooms
- 3 Tbsp. unbleached flour
- 1 c. chopped onion
- 1/2 c. chopped carrot
- 1 c. Chianti or other red wine
- 1 c. chicken broth
- 1 Tbsp. tomato paste
- 1 to 2 cloves garlic
- 1 tsp. dried Italian seasoning
- salt and ground pepper to taste
Directions

1Remove and discard visible fat from chicken.

2Cut meat into 1 1/2-inch cubes and reserve.

3Heat oil in large nonstick skillet over medium-high heat.

4Add mushrooms and saute until lightly browned.

5Remove with slotted spoon and set aside.
