  • 1 pkg. boneless chicken thighs (6)
  • 2 Tbsp. olive oil
  • 8 oz. sliced crimini or white mushrooms
  • 3 Tbsp. unbleached flour
  • 1 c. chopped onion
  • 1/2 c. chopped carrot
  • 1 c. Chianti or other red wine
  • 1 c. chicken broth
  • 1 Tbsp. tomato paste
  • 1 to 2 cloves garlic
  • 1 tsp. dried Italian seasoning
  • salt and ground pepper to taste

    Remove and discard visible fat from chicken.

    Cut meat into 1 1/2-inch cubes and reserve.

    Heat oil in large nonstick skillet over medium-high heat.

    Add mushrooms and saute until lightly browned.

    Remove with slotted spoon and set aside.
