Chicken Chipotle Chili

  • 3 Bacon Slices, Chopped
  • 1 lb Chicken Breast Cut into 1 inch pieces
  • 1 small Onion, Chopped
  • 1 can (14 -oz) Can Chicken Broth
  • 2 can (14.5oz) diced tomatos with green chiles undrained
  • 1 can (15-oz) Black Beans, rinsed and drained
  • 1 tsp Chipotle Seasoning
  • 1 cup Shredded Sharp Cheddar
  • 1 Salt & Pepper
  • 1 Sour Cream, Sliced Fresh Jalapenos (optional)

Directions

    In a large, heavy pot cook bacon over medium heat until crisp.

    Transfer bacon to a plate lined with paper towels to drain.

    Add chicken to pot; saute 4 minutes.

    Remove chicken and keep warm.

    Add onion to pot; saute 2 minutes.

    Add broth, tomatoes, beans, chipotle seasoning and salt and pepper; bring to a boil.

    Reduce heat to medium-low.

    Return chicken and bacon to pot; simmer, uncovered, 20 minutes, stirring occasionally.

    ladle chili into bowl.

    Top with cheese and serve with sour cream (if desired) and jalapenos
