Chicken Chow Mein

Ingredients
- 1/4 c. butter or shortening
- 1 c. onions, cut fine
- 1/8 tsp. pepper
- 1 c. hot water
- 1/3 c. cold water
- 2 tsp. La Choy sauce
- 1 1/2 c. diced chicken
- 1 tsp. salt
- 1 c. celery, cut fine
- 1 can bean sprouts, drained
- 2 Tbsp. cornstarch
- 1 tsp. sugar
Directions

1Melt butter or vegetable oil in hot skillet.

2Add meat and stir.

3Sear quickly (without browning or burning).

4Add onions and fry for 5 minutes.

5Add celery, salt, pepper and hot water.

6Cover and cook 5 minutes.

7Add drained bean sprouts.
-
8Mix thoroughly. Heat to boiling point.

9Add flavoring and thickening ingredients. Stir lightly and cook 5 minutes.

10Serve piping hot with chow mein noodles or cooked rice.

11Serves 2.
