- 1 medium onion
- 1/2 stick butter
- 1 (4 or 5 lb.) fryer
- 1 can each: cream of chicken and cream of mushroom soup
- 1 can sliced water chestnuts
- 1 can chopped mushrooms
- 8 to 10 medium size corn tortillas, tear in small pieces
- 1 seeded and chopped jalapeno pepper (optional)
- 2 c. shredded Cheddar cheese
Directions

1Saute onion in butter; put in bottom of casserole (do not stir into other ingredients).

2Mix chicken, soups, water chestnuts, mushrooms, tortillas and onion; spread half of this mixture into casserole dish over butter and onion.

3Spread half of shredded cheese over it; add rest of mixture and spread remaining cheese on top.

4Bake at 350° for 45 minutes to 1 hour.
