  • 3 to 4 lb. chicken
  • 1 Tbsp. chopped parsley
  • 1/2 Tbsp. celery flakes
  • 1 1/3 c. Minute rice
  • 1 1/3 c. water
  • 1/4 c. butter
  • 2 1/2 Tbsp. chopped onion
  • 1 can cream of chicken soup
  • salt and pepper to taste

Directions

    Roll chicken in flour and brown in butter.

    Remove chicken. Stir soup, seasonings and water into butter.

    Stir well and bring to a boil.

    Spread dry rice in 1 3/4-quart shallow casserole. Pour all but 1/3 of soup over rice.

    Top with chicken and rest of soup.

    Bake covered at 375° for 30 minutes or until tender.
