- 3 lb. boneless chicken breasts
- 2 Tbsp. olive oil
- 2 1/2 c. chopped onion
- 2 1/2 c. chopped bell peppers
- 1 c. chopped fresh parsley
- 1 Tbsp. minced garlic
- 1 c. white wine
- 2 c. chicken stock
- 2 cans cajun tomatoes
- 2 Tbsp. soy sauce
- 1/2 to 1 tsp. cayenne pepper
Directions

1Rinse chicken and simmer; save chicken stock.

2Cut into bite-size pieces.

3In large pot heat olive oil.

4Saute onions, bell peppers and parsley until onions are clear.

5Add garlic, wine and stock.

6Stir in tomatoes and soy sauce.

7Bring to boil.

8Add chicken pieces.

9Turn down heat and simmer 1 hour.

10Serve over cooked rice.
