Chicken Creole

Ingredients

  • 1 (5 to 6 lb.) chicken
  • 2 green peppers, chopped
  • 2 onions, chopped
  • 1/2 lb. thin spaghetti, broken in short sections (may need more)
  • 1 Tbsp. Worcestershire sauce
  • 1 can pimiento, chopped
  • 1 lb. hot Mexican Velveeta cheese
  • salt and pepper to taste
  • 1 can mushrooms, chopped

Directions

    Boil chicken until tender.

    Remove from broth (about 2 quarts broth needed).

    Add broken spaghetti, peppers and onion.

    Boil until spaghetti is tender, about 20 minutes.

    Add Worcestershire sauce, salt and pepper, pimento and mushrooms.

    Debone chicken. Dice and add to mixture.

    Grate cheese and mix until cheese is melted.

    Put in baking dish.

    May refrigerate for 24 hours before using.

    Place in a 400° oven for 30 minutes before serving. Serves 10.
